Mombasa Pumpkin Dessert



Origin Mombasa Kenya
Ingredients

1 medium sugar pumpkin, seeded and cubed
2 cups white sugar
1 cup coconut milk
1 teaspoon ground cardamom

Serving: 5

Directions

Steam the pumpkin pieces for 5 to 10 minutes. Scoop flesh from skins.
In a medium saucepan, combine the pumpkin flesh and sugar. Heat over medium-low temperature until sugar dissolves into the pumpkin. Add coconut and cardamom. Stir often. Cook until the mixture has thickened to thick pudding-like consistency.

Ethiopian Cabbage Dish

Ingredients

1/2 cup olive oil
4 carrots, thinly sliced
1 onion, thinly sliced
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/2 head cabbage, shredded
5 potatoes, peeled and cut into 1-inch cubes

Directions

Heat the olive oil in a skillet over medium heat. Cook the carrots and onion in the hot oil about 5 minutes. Stir in the salt, pepper, cumin, turmeric, and cabbage and cook another 15 to 20 minutes. Add the potatoes; cover. Reduce heat to medium-low and cook until potatoes are soft, 20 to 30 minutes

Green fried bananas

"I learned about this when I was in mbeya . I've never tasted better fries and more nutritious fries. Potatoes are very Mbeya common but bananas are more common. They taste as good as any fast food French fries and are healthier. Green bananas are the healthiest because they have all their vitamins where ripe ones lose most of them because they're too ripe. Green banana's do not have a strong banana flavor at all. It's very deceptive and very healthy. I couldn't stop eating them."

Ingredients



5 small unripe (green) bananas

1 quart oil for frying, or as needed
salt to taste




Directions



Peel the bananas using a knife, as they are not ripe and will not peel like a yellow banana. Slice into long thin wedges or strings to make fries.
Heat the oil in a heavy deep skillet over medium-high heat. If you have a deep-fryer, heat the oil to 375 degrees F (190 degrees C). Place the banana fries into the hot oil, and fry until golden brown, 5 to 7 minutes. Remove from the oil, and drain on paper towels. Pat off the excess oil, and season with salt. Serve immediately

For the past six months, I’ve been trying to figure out what makes food taste incredibleas opposed to merely good or great.  And now, I’ve found the answer.

It’s often said that great cooking is a combination of great ingredients and technique. Unquestionably, the quality of produce and skill of the cook both have a tremendous influence on the final dish.  But incredible food often contains one additional element – nostalgia.  Like flipping through an old photo album, food has the power to arouse memories and bring us back to special moments in time.
